It’s just a matter of making sure you get the right sushi.
“You have to have the right ingredients to make a good sushi, but if you go out and eat with the wrong ingredients, you can’t get the best sushi,” says chef Jamie Smith.

JOKING BAR The Jokering Bar is one of the oldest sushi bars in the world.
The bar is located on the top floor of JokERS SQUADEN in the heart of London’s financial district.
It is run by Jamie Smith, a chef who is best known for his award-winning Japanese cuisine.
Jamie and his family are a regular at Jokery Square and have been serving sushi at the bar since 1992.
Jamie is a former head chef at the prestigious Bistro Goya in Sydney.
Jokerers Square is the venue for the UK’s annual Tsukiji Festival, which is held in the same venue each year.
The UK is one the top sushi markets in the whole of the world, according to the World Health Organization (WHO).
Jamie is currently working on the first of four sushi bars on the menu, called the Joker’s Square, which will open later this year.
“The Japanese have always been very good at using fish and rice to bring out the flavors,” Jamie says.

When we start to put it in there’s a lot of the ingredients we have in our kitchens and then we add in a lot more of the Japanese flavors.”

The Joker’s Square is run with a very simple, straightforward ethos.
“We’re all about the sushi, we’re all trying to make the best possible sushi,” Jamie explains.
“That’s what makes us a great sushi bar.”
Jamie’s family has been serving Jokera sushi at JOKERY SQUARE for over 30 years.
They’ve been known to offer a full-day buffet on the second Thursday of each month.
They have an annual special menu of a dozen different sushi options for people to try.
“If we get a few people in, we’ll do a full menu of sushi, so we’re not looking for one-off people.
We don’t want them to get overwhelmed with all the options,” Jamie admits.
“People can get bored, so that’s a great way to get them into it.”
This year, Jamie will also be offering a full lunch menu at the restaurant on the third and final Thursday of every month.
Jamie has been working with his wife, Claire, on a new menu, which he hopes to launch later this summer.
The Jokerr’s Square will be available to the public from June 20.
